
My girlfriend is coeliac and low-fodmap.
No gluten, no garlic, no onion forces me to get creative.
Slow cooking any suitable protein is honestly a cheat code to food that punches above its weight.
For this one, I loosely followed The Queen of Australian Home Cooking, Nagi from RecipeTin Eats recipe for beef cheeks w/ red wine sauce, but substituted onion for leek (green parts only) and garlic for garlic oil (just in place of the olive oil).
I also removed the leek before blitzing the sauce, as I find they get bitter if kept in.
Carrots were honestly the star for me — followed this quick method for completely unhealthy but delicious carrots.
Mashed potatos are just freestyled, but generally it's more butter than you think is reasonable, and add milk until desired consistency.
Delish – will make again 👌
(Also pls ignore the fork holes in the carrot 🤦♂️)
