Don’t know how you feel about “plastic cheese” but another thing you could make that’s pretty cheap is these taco triangles my wife makes.
Take a tortilla and cut it in half and roll it into a cone and fill it with taco meat, Velveeta (or cheese sauce of choice), Rotel, diced onion, and shredded cheese then seal it closed with a paste made from flour and water and fry them. So good and they’re surprisingly filling.
