My wife is getting a surgery, so we had to do an early thanksgiving feast this past weekend. I was in charge of the turkey for the first time, so that was fun! Everyone loved it 🙂

Recipe was simple. I spatchcocked the bird, pat dried the surface and added salt/pepper/baking powder, then fridged for a few hours. Would have done longer but was pressed for time. Then made a garlic and herb butter, slapped it under the skin and over top and baked at 450 in a convection oven until breasts at 150 internal. Came out incredibly juicy all around.
