Your vadouvan is broken. I’m not being nitpicky, I’m just being real. Everything else on the plate looks beautifully executed. Your lobster is just the right amount of transparent in all the right places and it has a glisten that is astounding. The steak, a perfect medium rare. The fondant potatoes, so easy to fuck, perfect. The Roma beautifully caramelized and succulent. The vadouvan…..tragically….broken. Shitbin it and go again, Chef.
