I cooked these Mexican style lentils last night, they came out really good. They’d be just as good with a different kind of meat or no meat – other than the sausage they’re vegetarian.
– 2 sausages, pref smoked, sliced
– 400 g lentils
– 1/2 yellow onion, sliced
– 2 carrots, peeled and sliced
– 2 sticks celery, diced
– 100 g tomato purée
– olive oil
– minced garlic
– black pepper
– paprika
– bay leaves
– salt
Fry the sausages in the oil until well browned. Set aside.
Add the onions and garlic to the pan and until onions are translucent. Add pepper and paprika, cook a bit more. Add carrots and celery and cook on medium heat for 5 min. Add tomato puree and cook another 5 min.
Wash lentils, add to pan with veggies and add water to at least an inch deep above the ingredients. Add several bay leaves. Cover and bring to a boil; stir, set cover ajar and reduce heat.
Simmer until lentils are tender and liquid is reduced to whatever consistency you want, adjusting with more water if needed. Put the sausages in and heat through before serving.
Notes: next time, I’m going to make this with a different kind of sausage, and I may add some Knorr chicken or beef bouillon powder. Rice made by my roommate.
