What/Impressions: Exceeded expectations–a must experience for foodies at least one.  Alchemist is basically a theatre/IMAX planetarium type of experience that blends messages about food, culture with creative gastronomy.  I expected the food to be gimmicky and not deliver, but the experience to be amazing.  Alchemist exceeded those expectations and the food was good and maybe around the Disfrutar level, but overall far exceeded the “total package” of Disfrutar given the experience and amazing service team. 

Standouts (not all pics uploaded)

  • First and foremost you can’t comment on the food without saying you come here for the experience/theatre and staff.  All delivered 10/10.  I will also say the novelty and “surprises” in many of the courses were playful and fun (I don’t describe them all here to preserve some mystery). 
  • Early small bites the laksa was amazing, the liquified omelette has to be one of the best “omelettes” I’ve eaten.  Also, can’t complain about the space bread and caviar
  • Airy bread and jamon was wildly delicious.  My friend made a comment about how good it was and next thing you knew, they brought another and a special Masala wine that paired with it on the chef
  • The lobster claw was great, like a handheld lobster roll.  
  • The pigeon course was great.  Super tender and well cooked, with subtle flavors and this could have been served at any fine dining spot in a different serving dish and been a wow bite. 
  • Desserts were also all delicious–special shoutout to the “chocolate, not chocolate,” the duck caramel, and the ice cream sandwich. 

Misses

  • Windshield course was fine, but not outwardly delicious
  • Same for the “hunger” course and the “kiss” course (a bit too much going on for me) 

Atmosphere/Staff

  • Staff was awesome.  Lykke was amazing and runs a great service team. She came over and introduced herself and was very warm and fun.
  • Our primary server was a lovely woman from Italy who was engaging, knowledgeable, and really made our experience. The team truly made this a special experience. 
  • Atmosphere doesn’t really need any comment.  Fun, engaging and I’m glad to learn about the kitchen’s research efforts to actually attempt to address some of the problems with food/environment they comment on (I hope they are successful with the foundation efforts).

Revisit

  • Definitely yes *when enough changes*.  When messaging, videos, and dishes change enough, I will be back (it probably does not make sense to go twice in a year).  One of those special 19+/20 experiences and worth the time, money, and travel.

  2. They don’t seem to change many courses. I recognize a lot from posts a couple years ago (I’ve not been personally), butterfly, 1984, the tongue, plastic, hare, chicken. Not necessarily a bad thing. I love plenty of restaurants that change very little (Aska and Jua for instance); it just limits interest in revisiting. Alchemist certainly doesn’t need that extra business, though.
