Thin slices of pork are coated in potato starch, fried twice until super crispy, then tossed in a glossy sweet-and-sour sauce. The sauce is tangy and just the right amount of sweet. 😋

I remember a place in Jilin that did the same recipe but with chicken instead of pork and it absolutely slapped.
