Grass fed veal, dry brined for 18 hours, cooked in thyme butter and atop a bed of rustic mashed potatoes and a smear of spinach sauce all topped with micro broccoli greens.
The meat looks dry and tough. The “green sauce” just looks like a spinach puree. I’m sure it all tastes better than it looks though. Hope you enjoyed 👍
