This is my alternative meal when my son and wife want fast food. I use the popcorn chicken we get from Costco but I sometimes fry up some ground beef+pork (50/50), using the fond and grease to make the gravy.
Always a satisfying meal plus it’s cost effective.

Absolutely love making these. Even with diced grilled chicken they are delish too. Sometimes I substitute bbq sauce + hot sauce instead of the gravy!

I love making these!
One time we actually got KFC gravy for our bowls. We went to the drive-thru and asked for a large container of gravy. They didn’t know how to do that at first, (lol) but they eventually figured out how to charge for a large gravy with nothing else. It was only a few bucks but it made our homemade bowls that night so damn good!

You should have opted for a batter more similar to Popeyes for your chicken, for better crunch.
