2.5 cups masa harina (mine was 378g)
2-2.5 cups water
Salt
Mix into a dough, knead so that everything is incorporated, split into 8 balls and let rest.
472g black beans (I stewed these the night before with better than bouillon, bay leaf and home made chilli paste but you can also just stew some canned ones for a while until soft)
78g light Mozzarella type shred
20g pecorino Romano
Mix beans and cheese, and weigh/divide into 8 equal portions
The hard part is filling the dough, for this you should watch a YouTube tutorial ๐
Makes 8 portions
You can fry them naked, but i used 5 grams of ghee.
Leftovers can be frozen before frying ๐

Next time make the Curtido with it! Itโs just cabbage, carrots, and onions mostly so itโs also low cal. ๐ [Hereโs a recipe for it.](https://youtu.be/WMkYR2AVJb0) Thereโs also salsa de tomate that goes really well with them too if you wanna go all out lol.
Also for future low cal inspiration thereโs also spinach and cheese as well as zucchini and cheese ones that are also really good!

Fucccckkkkk pupusas are one of my favorite foods I discovered in Cali. When I went back home I called every single even vaguely Hispanic restaurant and asked for them – half of the people didnโt know, a quarter of them laughed and thought I was making it up, and the other quarter knew but said no they didnโt have any ๐ so sad! Now thanks to you tho I can make them myself! ๐

Oh man, thereโs this little El Salvadoran pupusarie back home that had the beeeeeeest chayote y queso pupusas, the curtido was so spicy and the salsa was perfect. Omg I wanna go home.

Ok so I absolutely love pupusas more than anything. I discovered them in the freezer section of my grocery store and went about 6 months of eating them every week. I know they arenโt the same as homemade and Iโm now on a quest to make these! Thanks for sharing!!

If you would like to try a different variation if available to you in Germany get “Enriched Rice Flour” from the brand Goya.
Making them with rice flour will take a little more trial and error and it is more filling than corn flour pupusas.
In terms of calories I think they’re about the same 60g rice is 240, 60g corn is 220.
Also don’t be afraid to flatten them out and the fillings ooze out, my favorite part to eat is when the cheese gets fried because it escaped out of the masa.
