    Cheese:tomato:basil:glaze ratios are insane.

    It looked nice to me for 2 seconds until I realized what it was supposed to be.

  4. I wish we could collectively lay off the balsamic glaze. It’s almost always used where it doesn’t need to be, and in much, much larger quantities than it should be in the first place. Just because it comes in a squirt bottle doesn’t mean you need to squeeze it so hard and for so long. And for the amount of tomatoes and cheese, there could maybe be a bit more basil, or another fresh herb in contrast. Maybe even some flaky salt and/or freshly-ground pepper.

    And I know this is a ‘plating’ sub, and not something we can taste, but tomatoes are usually on the acidic side already – they don’t need all the vinegar we see way too often. If anything, a light drizzle of good olive oil would suffice. And not to keep nitpicking, but the tomato:cheese ratio seems like there should be more tomato, or maybe less cheese.

    Just my two cents. Sorry if it comes off as rude/condescending, but that certainly wasn’t the intent.

    A little lighter on the glaze and a touch higher on the basil. If you can’t get good basil or tomato late in the season like me, this is fine, just don’t hide it under the glaze. Hopefully it’s many years aged balsamic to hide the sin of shitty tomato and basil. Cheers.
