    I’d definitely recommend making normal sized muffins if you have a pan for it, but I only had a pan for minis.

    You can use whatever protein shake you like (homemade or otherwise), I just used what I had on hand since this was kind of a fridge cleaning recipe. The pancake mix was Pearl Milling Company’s, but Kodiak’s works fine too.

    Basically:

    Roast 3oz of hazelnuts (350°f for about 25 minutes) remove as much skin as you can, reserve 1/2oz of the Hazelnuts for topping , crumble the rest in a food processor/blender just short of becoming butter.

    Take the reserved hazelnuts and blend them just until the bits are about rice grain sized.

    Take your pancake mix, add the recommended amount of water ***minus*** the amount of protein shake you add, the protein shake, 4 overripe bananas (smashed), your brown sugar, cinnamon (did not measure this so idk), and your blitzed hazelnuts.

    Mix this until well combined, pour into your pan, top with the reserved hazelnut bits, and bake at 350°f for about 30 minutes.

    Also I know 96 is an absolutely insane amount of muffins, but they’re very tiny, so they don’t take up much space, I swear. 😅
