Purple sweet potatoes are a good fun option but for roasting/baked like you’ve shown, the traditional variety is a tastier and better suited option! IMO of course.

I went to the Philippines and people use purple sweet potatoes in just about anything. They are very good and taste better than yams or sweet potatoes.
