  1. I’d like to see it with the salmon skin chips on a separate small plate on the side so the tartare is resplendent on its own in the centre but apart from that… the colours, the lighting… that is sexy as balls.

    Pretty and delicious. Definitely something I would want to eat. The color balance is lovely. The salmon skin chips provide a nice balance.

  3. Agree with the other poster about serving the chips on the side.

    What are the leaves that are on the plate? Are they supposed to be eaten? If not, I’d remove them to make it pop even more.

    If they are, I’m still not fully sold on them, as everything else is cut up into small bites *except* the leaves, meaning the customer will have to portion it out themselves to get the right taste.

    Looks fantastic though honestly! Nice job

    Thank you all for the kind words and constructive feedback! I really appreciate it. I added the salmon and lemon to that side since they’re needed to balance the flavors, so I didn’t want to leave them out.

    Also, the leaves were sticking out on one side, so I thought the chips could help balance that visually as well. Anyway, thanks again!
