    I just season the steak with salt and pepper, bag it up and sous vide at 135F for a an hour or two if frozen, then pull it out, pat dry and sear it hard in a hot pan with a bit of oil and butter. For the miso soup I just heat up some beef or chicken broth, stir in miso paste until it tastes right, and toss in whatever garnish I have like tofu, scallions or seaweed.

    Sauce :
    2 tbsp sugar
    5 tbsp soy sauce
    3 tbsp mirin
    2 tbsp sake
    .5 tbsp oyster sauce
