    Salmon doesn’t take too long to cook. If you press on it with a fork and it starts to flake apart you should be good.

    I’m a paranoid cook as well and having a meat thermometer has been a lifesaver for me.

  3. Overcooked actually. I’d recommend getting a good thermometer and learning how to use it properly, and how to calibrate it every now and then. That’ll pay dividends with your situation.
