    2 cups cubed stale bread

    1/2 diced yellow onion

    1/2 tbsp-ish oil

    2 chopped green onions

    1 cup thawed spinach

    1 tsp minced garlic

    1 cup shredded mozzarella

    1/2 cup almond milk

    1/2 tsp yellow mustard

    Salt and pepper (eyeballed)

    Preheat oven to 350

    Heat ~1/2 tbsp oil in a skillet on med-high

    Cook diced onion until translucent and starting to brown

    Add garlic and the white parts of the green onions, cook ~30 secs til fragrant

    Mix almond milk, eggs, mustard, salt, and pepper in a bowl

    Put cubed bread in a greased 8×8″ baking dish, add ~1/2 the cheese, and all the onion, green onion, & garlic mixture. Mix it around a bit

    Pour the milk/egg/etc mix on top

    Add the rest of the cheese on top

    Bake 25min covered w/ foil, then 25 uncovered, moving to top rack for the last 5 (probably use a broiler if you have a functioning one – idk how long)

    Makes 4-5 servings (I cut it into 9 because I wasn’t thinking, lmao)
