First of all sorry for the very poor picture quality. I didn’t cook in a while and want to start living healthier again so I had a baked aubergine with a miso-honey (and more) sauce. I first roasted it in the pan over some sesame oil tho. I also let my cucumber sit in a soy sauce- dashi (not fish dashi but vegetable dashi) mix. For the carbs I had some couscous (I just prepared it as one would prepare instant noodles). The couscous was already seasoned so I only added a bit of salt and paprika powder (in the lack of any other vegetable available) and for desert I had mango.
I tried to cover all main nutrients I could think of (lots of fiber, a bit fats they the oil, protein through the egg, carbs through the couscous and vitamins through the mango as a desert to avoid wanting to have a sweet craving after).
I’m actually pretty proud I cooked again and made up something balanced I never had before 🙂
