
Fanta Cake
Sponge Cake Ingredients:
– 6 Egg Yolks and 6 Egg Whites (separated)
– 6 Tbps Sugar
– 4 Tbsp Flour
– 2 Tbsp Cocoa Powder
– 1 Pack/5g Baking Powder
– Pinch of Salt
Cottage Cheese Filling:
– 750g Cottage Cheese / Twarog (stocked in most Tesco Stores) / Full Fat Curd Cheese
– 200g Powdered Sugar
– 200g Unsalted Butter
– 2 Packs of Vanilla Sugar / Vanilla Paste
– 1 Whole Lemon Zest
Fanta Topping:
– 700ml Fanta (or any Orange Fizzy Drink)
– 100g Vanilla Custard Powder
* Sponge Cake Base Preparation: *
– Separate the egg whites from the yolks, pour the whites into a mixing bowl, whisk until hard, and leave to the side for now.
– Place your egg yolks into another bowl, mix in the sugar, and whisk until soft peak.
– Put your Flour, Baking Powder and salt into your yolk mixture, mix well.
– In 4 parts, fold your egg whites into your yolk mixture VERY CAREFULLLY (too rough and you will knock out all of the air in your egg white mixture, making it too dense, we need light and airy).
– Now start to preheat your oven to 200 degrees celcius.
– Once your mixture is fully combined, take your preferred size of cake tin, butter the inside (base and walls), then add a tablespoon of flour and shake your tin until you have a light coating of flour covering the inside.
– Now gently pour your mixture into your cake tin.
– Once your oven is up to temperature, place your cake tin in the oven and bake for 15 – 20 minutes (depending on your oven).
– Once baked, allow to completely cool.
* Cottage Cheese Filling: *
– Using a hand blender (not totally necessary, but you won't have that smooth texture if not), hand blend your cottage cheese until smooth.
– Place your butter into a stand mixer (or, using an electric whisk), whip well, and then slowly add your sugar whilst whisking.
– Mix in your Vanilla and Lemon Zest.
– Mix in your cottage cheese bit by bit (keep whisking) until you have your desired texture.
– Now, scoop your cottage cheese mixture onto your sponge cake, flatten and smooth.
– Place this, cake tin incuded, into the fridge while you prepare your Fanta layer.
* Fanta Topping: *
– Place your custard powder into a saucepan, and slowly mix in your Fanta (not an advert, unless Fanta want to pay me :D).
– Heat on the hob on a medium heat/setting.
– Keep stirring until your mixture thickens (don't worry if it looks like jelly, this is what we're after; it's not supposed to look like custard).
– Once thickened, take off of the heat, and stir continuously whilst the mixture is cooling, from HOT to warm (if you pour this on to your cake while still hot, it will melt your cottage cheese filling).
– Once cooled (well, warm), pour into your cake tin, spread and smooth, and place into the fridge for a minimum of 4 hours, or overnight, until set.
