Grilled Sausage & Peppers

Ingredients 

  • 1 pound cheese & parsley sausage(Italian sausage will work for this as well) 
  • 3 bell peppers 
  • 1 medium yellow onion 
  • 1 tablespoon fresh chopped parsley 
  • 1 tablespoon olive oil 
  • 1 ½ tablespoons red wine vinegar 
  • Freshly grated parmesan cheese 
  • Salt & pepper to taste 

Directions 

  • Remove all the seeds & stems from the bell peppers then slice them into even slices. I tend to leave these a little thicker for the high heat of the grill .
  • Remove the skin from your onion and slice into similar size slices as your bell peppers. This will ensure everything cooks evenly 
  • Place all your onion & pepper slices into a mixing bowl 
  • Coat the veggies in olive oil 
  • Season the peppers & onions with salt & pepper
  • Set your grill on medium heat with one side completely off so you have a cool zone 
  • Grill your peppers & onions in a grilling basket. This step should take around 5-7 minutes
  • Once the veggies are just about done move them over to the cook side of the grill 
  • Place your sausage on the grill grates and rotate every 90 seconds after 3 minutes flip the sausages & repeat the process. 
  • Once the sausages reach an internal temp of 160-163 degrees they r done 
  • Let the sausage rest for 5-10 minutes 
  • Place your grilled peppers & onions in mixing bowl 
  • Add red wine vinegar and mix gently 
  • Place the peppers and onions over the top of the sausage 
  • Finish this off with some freshly grated parmesan cheese and fresh chopped parsley
