    • 2 tbsp butter

    • 2 tbsp flour

    • 2 cups low-sodium beef stock

    • 1 tbsp Worcestershire sauce

    • 1 tsp Dijon mustard

    • 1 small onion, sliced

    • 1 cup cremini mushrooms, sliced

    • 1 bay leaf

    • 1 tsp soy sauce (optional, for depth)

    • Salt and black pepper, to taste

    Mashed Potatoes

    • 2 lbs Yukon Gold potatoes, peeled and cut into chunks

    • 4 tbsp unsalted butter

    • ½ cup warm heavy cream or whole milk

    • Salt and black pepper, to taste

    Green Beans

    • 1lb green beans cut and trimmed

    • 2 tbsp butter

    • 3 clove garlic, sliced

    • Squeeze of fresh lemon juice

    • Salt and black pepper, to taste

    Garnish: chopped fresh parsley

    Method

    Mashed Potatoes

    1. Place potatoes in a pot, cover with cold salted water, and bring to a boil. Reduce heat and simmer until fork-tender, 15–20 minutes.

    2. Drain well, return to the pot for 1 minute to steam off excess moisture.

    3. Mash or rice the potatoes. Add butter, then gradually stir in warm cream until smooth. Season with salt and pepper. Keep warm.

    Salisbury Steaks

    1. In a bowl, mix breadcrumbs and milk; let stand 2 minutes.

    2. Add beef, egg, grated onion, Worcestershire, Dijon, garlic powder, salt, and pepper. Mix gently until just combined.

    3. Form into 4 oval patties.

    4. Heat oil in a large skillet over medium-high heat. Sear patties until browned, 3–4 minutes per side. Transfer to a plate.

    Smooth Gravy

    1. In the same skillet, melt butter. Add onions, mushrooms, and bay leaf. Cook until well browned, 6–8 minutes.

    2. Sprinkle flour over and stir 1 minute.

    3. Whisk in beef stock gradually, followed by Worcestershire, Dijon, and soy sauce if using. Simmer 5 minutes.

    4. Strain through a fine sieve, pressing solids to extract flavor. Discard solids and return smooth gravy to the pan. Season with salt and pepper.

    5. Add Salisbury steaks back to the gravy. Cover and simmer gently until cooked through, 10–12 minutes.

    Green Beans

    1. Steam green beans until tender-crisp, about 8 minutes.

    2. In a skillet, melt butter over medium heat. Add garlic; cook 30 seconds.

    3. Add green beans, toss to coat, and finish with lemon juice. Season with salt and pepper.
