Roast chicken and vegetables with baked mac and cheese and collard greens. Then I used the pan drippings to make my first good brown gravy πŸ™‚

  1. Probably my best roast chicken yet since I actually followed directions and had a meat thermometer this time.

    I made a Mexican spice blend for the chicken because the original idea was to use it for burritos. But then we started talking about making soul food burritos. By the time everything was done I didn’t feel like making burritos so we just had it as is, but will probably do some weird chimichangas with the leftovers.
