    I’d go for all purple flowers instead of mixed with white, but either way that is a stunning dish and I’d love to eat it.

  3. Looks great, but I think you ruined it by dusting the black powder all over your bright colours. Maybe dust first then plate on top for extra contrast?

    I personally don’t want to eat partially congealed/runny 63 degree egg yolk with beets. But that’s just me.

  5. Love the colour gradient – really stands out. I think as others have said dusting on the bottom of the plate would make it pop more.

  7. I like the dish itself but I wish you would have powdered the plate first. There is a part of me that would like to see it without the garnish because I feel the colors alone are so stark that the garnish kinda draws from it. These earth tones coupled with the earth tones of the plate are so intense that I suspect plating it in ROYGBIV order would have looked fuckin wild! Idk maybe that’s just been a pet idea of mine lately but that color block look is so cool to me.

    If you’re gonna do this, you better make sure your knife cuts are perfect. This looks like an extern cut these beets
