🥣 Ingredients:
– 1 small banana (60 g)
– ½ tsp baking powder (2.2 g)
– ¼ tsp salt (1.5 g)
– ¼ tsp vanilla powder or extract (1.5 g)
– 2 medium eggs (110 g)
– ½ cup low-fat milk, 1% (100 ml)
– 2 slices whole flour bread (55 g)
– ½ cup blueberries, fresh or frozen (100 g)
– 2 tsp brown sugar (7 g)
🧑🍳 How to Make It:
1. Mash banana directly in your baking dish.
2. Add baking powder, salt, and vanilla. Mix until it starts to foam slightly.
3. Crack in eggs and pour in milk. Whisk until smooth.
4. Tear up bread and mix it in until fully soaked.
5. Add blueberries and sprinkle in brown sugar. Mix gently.
6. Bake at 375°F (190°C) for 25–30 minutes, until golden and set.
7. Enjoy warm or chilled. Optional: top with Greek yogurt or a drizzle of honey.
