  1. very clean lines, though the one whole half cherry should probably just be another 1/8th segment like the others.

    and ditch the gold foil- it’s not doing anything, atleast not with that altitude

    This is super clean. Only thing I’d say is maybe pipe the whipped cream instead of the quenelle

    Try doing your cuts with a wire if you aren’t already and experiment with different temperatures for cutting. You’re leaving yourself no margin for error if you go geometric like this and even the slightest bit of smearing on the layers is distracting. It’s already done very well mind you, but there’s room to make it even cleaner.

    The whipped cream needs a bit of love and you absolutely do not require gold foil to make this shine. It stands very well without.
