The Beyond breakfast sausages were delicious. I added the mushrooms to the pan after cooking the sausages to add more flavor. To volumize the Just Egg I added a little water and whipped it before cooking. It did make them a little fluffier.

There’s an [interesting article about Just Egg that states that to date the company has sold the equivalent of 100 million eggs.](https://www.cnbc.com/2021/03/01/eat-just-good-meat-sells-lab-grown-cultured-chicken-in-world-first.html) That’s an amazing statistic, imo.
Great suggestion about adding water to Just Eggs. I never considered doing that! Looks amazing!

I find that adding spinach to the just egg increases the volume a lot!
This year marks my 20th year of being veg. Isn’t it amazing how far we’ve come? So happy to see how accesible this way of life has become!!
