To make the kale (one of my go-to simple veggies): I used .5 tbsp olive oil to saute 2.9 oz onion, some red pepper flakes, salt, and a clove of garlic, and then the 3 oz of kale. I added ground pepper and lemon juice at the end.
The black beans (weighed 6 oz cooked) I made in the instant pot from dried black beans cooked at high pressure for 45 minutes.
Finished it off with 3 tbsp of salsa on top (Green Mountain Gringo is my favorite grocery store brand, and has no added sugar).
