Directions – Mix eggs, egg white, chickpea flour (besan), oat fibre, grated zucchini (no need to press out the water), salt and seasonings. Use your choice of oil spray (I used coconut) to make small pancakes on a flat pan. Serve with sriracha or any hot sauce of choice. Makes 10 pancakes

I added a touch of baking powder one time and it frankly didn’t make a difference. But hey, I’m no expert.
