– Quinoa: 1c quinoa, 2c water, 1/2tsp turmeric, 1/2tsp cumin, simmer until quinoa is cooked through
Chickpeas:
– Start by frying 1/2 chopped yellow onion in 1tbsp olive oil to desired level of caramelization
– Create Shawarma seasoning blend: 1tbsp paprika, 1/2tbsp allspice, 1tsp cumin, 1tsp turmeric, 1/2tsp garlic powder, 1/2 tsp onion powder, 1/4tsp ground ginger, 1/2tsp red pepper flakes, 1tsp parsley flakes
– When onions are done, deglaze the pan and add 15oz chickpeas, 2 heaping teaspoons seasoning blend and 1/4c water. Cook until water is simmered off
– Serve 1/2c quinoa and 1/4 of the chickpea mixture with fresh spinach, diced tomatoes and cucumber
(Also would be good with a dollop of hummus I think, just didn’t have any!)

It looks great, but 1tbsp oil is responsible for over a third of the calories there. You do you, but for myself, I would totally reduce that so I could have more of the other foods or a nice amount of hummus or vegan tzatziki or something on top.
