Ingredients for 8 servings:
4 cups of black beans cooked
3 Beyond sausages
11 mini sweet peppers
carrots, 4 medium
celery, 3 stalks
onion, red 1/2 medium
onion, white 1 medium
cilantro
corn, 1 cup
garlic,
3 cloves
No -Chicken (Better than Bouillon brand), 2 T plus more to your taste
Enough water depending on how concentrated you want your soup.
Chop veggies and sausage. Saute onions and garlic and then add veggies and beans to pot. Add water, bouillon, and beans. In separate pan brown the Beyond sausages. Add these last because they will get soggy otherwise.
Cornbread muffins were made using the recipe on the back of the cornmeal container. Left egg out of recipe, obviously, and they tasted great – don’t need egg replacer, just add a little extra baking powder. I’ll look up the recipe in minute and get you the cals.

How did the texture of the sausages hold up in the soup? I’ve been curious to try them in soups but hesitant due to texture concerns.
