237 g Brussels Sprouts
94 g potatoes
123 g carrots
Put veggies on a sheet pan at 350 and bake till slightly charred. When done finish spray oil, salt, and pepper.

Meatless meatloaf. 1/12 of recipe below
2 packages of Beyond Beef (453 g per package)
1 T Just Egg
3 T Soy Sauce
.5 T liquid smoke
35 grams parsley
1 clove garlic minced
134 grams carrots minced
214 grams celery minced
328 grams onion minced
1 T Annie’s Worcestershire sauce
Heinz sugar free ketchup to top
Mix everything except ketchup and bake for about an hour or until done. Just before finishing you can add the ketchup on top and bake it on or like me you can add it after cooking. Mustard is also good with this. I used 375 F for first 1/2 hour and then 350 for the remainder but you can adjust this.
