    Re: the sweet p’s, I cut up one big sweet potato, tossed it in 1 tbsp coconut oil, and roasted until done and slightly caramelized. Put it all in the fridge. Then I added 1/4 cup to my oats yesterday (microwaved for like 20 seconds to warm up from the fridge, or I could have just mixed it in with the cooking oatmeal to warm it up too). Sprinkled with cinnamon and it’s a lovely breakfast!

    I did reduce my oatmeal portion, I usually need 1/2 cup of whole oats to keep me full through the morning, but I lowered to 1/3 to compensate for the carbs in the sweet potato and apple, and it did the trick.

    It gives me about 4-6 servings depending on the size of the potato and my portions, which I’ll eat over the course of the week.

  2. Okay but even better than sweet potato in oatmeal- sweet potato in a Greek yogurt bowl with nut butter 🫶🏻
