Can I mainly only have eggs, chicken/fish, 2x this protein shake and a multivitamin daily for a few months? Sometimes I’ll add in some organ meat, avocados and veggies. After starting metformin for weight loss I’m genuinely not super hungry and want to just hit my protein and fiber intake.

Most likely you would not be able to meet all of your micronutrient needs with a diet like that.
Of course you can but I will reccomend only 1 shake a day max. Its probably not good to eat too much processed foods even if macros are good
At the very least I’d add a tablespoon or two of chia to your lineup, because you don’t have enough fiber in that selection of food unless you eat avocados every day (which will increase your fat cal by a lot) or if you make sure to do high fiber veggies when you do veggies. Getting fiber from food is way better than through a supplement (and with chia it’s really easy, chia is a food not a supplement, but you can just add it to a drink so it’s as simple as a supplement).
The only other concern I’d have with this lineup is that you may really tax your kidneys doing this. Congrats on your metformin helping limit your appetite, and I understand the struggle of getting the right amount of protein when your appetite is lacking, but high protein only can make your kidneys overwork, especially if you do it for a long time. Ensure they’re in tip top condition first, before doing this.
Finally, if you are diabetic, you should proceed with caution. Some people do ketogenic diets for losing weight (which your diet would possibly put you into nutritional ketosis) however, when diabetic, ketosis can have a delicate balance, and can lead to keto acidosis which is very bad (for your whole body, but also especially kidneys).
Those shakes have a good nutritional profile given the content and some decent ingredients for a “sugar free plant based” option, and I was skeptical about them not having sugar alcohols or stevia but I see it has monk fruit which is very sweet so that probably makes up for it.
How do you like those shakes?
I recommend OptiFast. It’s medically prescribed nutritionally complete food
