



For the rainbow colors I used:
-chicken breast, marinated with a tiny bit of soy sauce and paprika, pepper and cumin seasoning 🍗
-sweet potatoes air fried at 200C for 20 mins sprayed with olive oil
-diced avocado 🥑
-diced bell peppers, onions and tomatoes🍅🧅🫑
-handful of blueberries to add the sweet punch 🫐
For the dressing I used a godsend dressing I found at the asian market- lemon dressing with 4 cals per 30g serving! I mixed it with 60g thick yogurt to create a creamy consistency and it was so delicious. Tasted like a sour vinaigrette but with a hint of sweetness.
