When I was a barista I told people to do this all the time! Have a single pump (or two) of the flavour you want and supplement the rest with sugar free syrup or sweetener. Swap latte for iced coffee/cold brew with a touch of cream…you’ll get more caffeine for fewer calories and it’s less expensive.
I’m not confident in the 75 calorie figure unless you only did a single tablespoon of cream (we use half and half as cream). Cold brew is 5 cal, one pump peppermint = 20cal, 1 pump mocha = 25 cal, 1tbsp cream = 20 cal. Unless you are adding the cream yourself and have a *very* accurate feel for how much a tablespoon is, I wouldn’t trust the barista to know even if you specify. We were only ever taught to eyeball it, never given tools to measure the amount we add, so you’re literally just getting a random pour. It says 1/2″ which is probably more like 2+tbsps. Could be as much as 4 tbsps, which would bring your drink total to 130…still an excellent choice, but it’s good to be aware.
