[Pro/Chef] Picked up some perfect peaches today and poached them in bourbon with a little sugar and water. Delicious with or without a little ice cream.

    * ½ cup (118 ml) good bourbon
    * ½ cup (118 ml) water
    * 1 tablespoon granulated sugar
    * 4 ripe peaches, halved and pitted

    Add the bourbon, water, and sugar to a large sauté pan and stir to combine. Place the peaches in the pan, **flesh side down**.

    Bring the liquid to a simmer over medium-low heat and poach for 10 minutes. Gently turn the peaches over to the **skin side** and cook for 5 more minutes until tender.

    Remove the peaches from the pan and set them aside to cool slightly. While they cool, keep the pan on a simmer for about 10 minutes until the bourbon mixture reduces by half into a syrup.

    Once the peaches are cool enough to handle, gently scrape off the skins using a small spoon. Serve them warm drizzled with the reduced sauce and ice cream if you like.
