Sweet potato tempura avacado/mango Sushi rolls

Yum! I haven’t tried making it with mango before. Do you do anything special or a ripe mango is suffice?

I want to try so bad with grilled mango! I’m wondering if the tad of char does anything to the vibe (I typically like a warm/fried roll).
