Recipe:

Yields: 6 pancakes

1 1/2 cups plain flour
1 1/4 tsp baking powder
1/2 tsp salt
3 Tbsp sugar
2 Tbsp neutral oil
2 – 2 1/2 cups oat milk
1 cup freeze dried strawberries
Plant based butter, to grease

Toppings —
Fresh strawberries, to serve
Strawberry syrup, to serve
Maple syrup, to serve

  1. Add flour, baking powder, salt, and sugar to a mixing bowl then whisk together. Add oil and milk, whisk to combine until incorporated (if too dry, add extra milk). Fold in freeze dried strawberries.

  2. Heat griddle or pan over a medium heat. Add a bit of butter to pan. When melted and sizzling, pour about 1/3 cup of batter onto griddle.

  3. Cook 2-3 minutes or until semi-firm on top. Flip pancake. Cook for another 2-3 minutes.

  4. Place on plate and finish cooking off rest of batter. Serve warm with optional toppings.
