    Honestly think this is the first time I’ve ever been hungover and it’s making me feel old. Anyway, this def hit the spot.

    Jalapeño Bacon Jam
    1 pound thick-cut bacon, diced
    1 large or two small yellow onions, finely diced
    3 medium jalapeno peppers, seeded and diced
    2 cloves garlic, grated
    ½ cup light brown sugar, packed
    ⅓ cup apple cider vinegar
    ¼ cup maple syrup
    Salt and pepper

    Wrap
    2 tortillas, 1 burrito sized, 1 fajita sized
    2 scrambled eggs
    Breakfast sausage
    White American cheese
    Hashbrowns
    Season salt
    Salt, pepper

    Fry the bacon in a pan until crisp. Set to the side and using the reserved fat, caramelize the onions over medium-low heat. Once nice and soft and slightly brown, add in the jalapeños and garlic and sauté for another 3-5 mins. Then add the bacon back in along with the brown sugar, maple syrup, apple cider vinegar, salt and pepper. Get it nice and bubbly, stirring often. Remove from the stove once thickened.

    Put down a burrito sized tortilla and load on the bacon jam, sausage patty, cheese, hashbrowns, and eggs. Top with a fajita sized tortilla and fold the edges of the bottom tortilla so everything is wrapped nice and tight.

    In a pan add in a knob of butter and crisp the wrap until nice and golden on both sides. Cut in half if desired and eat up!!
