made the meat by marinading with fresh orange + lime juice + onions/garlic/serrano peppers + seasonings + alcohol for 24 hours, then searing on the cast iron. pico is simple, roma tomatoes white onions and lime juice (i forgot to buy cilantro 💔)
blow torching the meat and cheese really brought it all together 😋
