
Red beans and rice recipe is from Mississippi Vegan’s blog. I didn’t have the patience for a 12hour cook, but doing it in ~3hrs after an overnight bean soak worked fine for me. I love beans and rice and just knowing it’s so cheap, delicious, and healthy… makes me so happy!
Here’s my avocado secret: I always buy them when they’re hard as rocks. Lately Aldi has had them for $0.50!! Once I feel them becoming *just* ripe, I stick them in the fridge. I swear they can stay in that *just* ripe stage in the fridge for multiple days! I was amazed that avocado came out perfect; I think I bought it like 2 weeks ago.
