Ingredients

100g green lentils (dry)

200g pumpkin

20g pumpkin seeds

30g red onion

30g olive oil

30g lettuce

20g mustard

thyme

salt & pepper

Instructions

Roast pumpkin cubes at 180°C for ~20 min with part of the olive oil.

Boil lentils ~25 min until tender.

Slice onion and prepare lettuce.

Make dressing from mustard, olive oil, thyme, salt, pepper.

Combine everything and top with pumpkin seeds.
