Recipe:

8 oz lion mane
8 oz plant based chicken
3 Tbsp gochujang paste
1 Tbsp pure sesame oil
2 Tbsp chili oil
2 tsp black pepper
1 tsp salt

  1. In a bowl, add gochujang paste, sesame oil, chili oil, black pepper, and salt then whisk together.

  2. Add equal parts sauce mixture to plant based chicken and lions mane then coat well.

  3. Marinade for 30 mins.

2 Tbsp pure sesame oil
3 spring onions, roughly chopped
1 large red bell pepper, thinly sliced
2 Tbsp ginger garlic paste
6 oz garden peas
Salt & pepper, to taste

3 cups cooked white rice (preferably old rice)

  1. In a large pan over a medium-high heat, add sesame oil.

  2. Once hot, add spring onion and cook until just soft, about 2 mins.

  3. Add ginger garlic paste, cook for another minute. Then add bell pepper and cook until fragrant, about 2 mins.

  4. Remove from pan and set aside.

  5. Add marinaded mushroom. Sear on each side for about 2-3 minutes. Add chicken and cook.

  6. Add green peas and bell pepper mixture followed by rice. Stir and cook for about 4-5 mins.

  7. Serve and enjoy.
