

Batter: 1/2 cup chickpea flour, 2 tbsp egg replacer, 1 tsp baking powder, 1/4 tsp cumin, pinch of salt, 1 cup water. Sift flour into a small bowl then add the rest of the dry ingredients. Whisk to combine. Slowly add water as you gently whisk until the batter is smooth. Let sit for 10 minutes.
While the batter is resting, cut up your choice of veggies. I used sliced portobello mushrooms and thin strips of green onion.
Add oil to a small nonstick skillet and heat on med low. Once heated, lay down veggies then ladle 1/3 of the batter over the veggies. Cover and let cook for 5 minutes. Uncover, flip, and cook for an additional 3 minutes uncovered.
Transfer to a plate and duplicate cooking steps 2 more times.
Drizzled some hot sauce over mine 😋
