I know it sounds kinda weird but is soooo good and filling. Hits the spot when you’re craving a big juicy satisfying sandwich for lunch!!

For 2 large servings of chicken salad, mix:

one large can of chicken (~6 oz)

yellow mustard to taste (~ 3 tbs)

one cup of nonfat cottage cheese (I use Nancy’s probiotic cottage cheese)

finely diced red onion and celery

1-2 tablespoons light or regular mayo (optional)

everything but the bagel seasoning

Serve on your preferred bread – I like inked wolf keto white or sourdough, best low calorie around!! With lettuce, mustard, and pickles. DELICIOUS! Filling! And under 400kcal per serving!
