Cut each salmon portion into 3–4 oz pieces.
Grill each side for 1 minute.
Finish in the oven at 350°F for 2–3 minutes.
Lemon dill sauce
* 2 oz butter
* 1 cup dry white wine
* Juice of 1 lemon
* 1 tbsp shallot, minced
* 1/4 cup capers
* 1/4 cup fresh dill, chopped
* Salt & pepper to taste
Simmer wine and shallots in a saucepan over high heat until reduced to about 1/4 cup (about 3 minutes).
Lower heat and whisk in butter, one piece at a time, until smooth. Add lemon juice.
Remove from heat, then stir in dill and capers. Season with salt and pepper to taste.
