
The star of the board was an unusual one —
smoked rainbow trout from Serbia, produced
October 2016, aged 10 years. Company no longer exists,
6,000 cans remaining.
Paired with aged gouda, cornichons, sourdough
and a dry Riesling. After 10 years of aging
the fish was buttery and incredibly complex.
Best conversation starter I've ever put on a board. 🐟
