Pizza night! This week’s pizza had my regular three cheese mix (mozzarella, provolone, and smoked Scamorza) plus Colby Jack, béchamel sauce, grated Cotija, and baby potatoes. Bacon crumbles were added for the last couple of minutes in the oven. Then finished with homemade cilantro ranch, dried herbs, more Cotija, fresh chives, and crispy shallots.
