
I made this recipe up as I went along but honestly it turned out great. My husband and I both loved it.
-5 bell peppers cut in half
Filling
-can of lentils drained and rinsed
-can of white kidney beans drained and rinsed
-super firm tofu crumbled up
-one yellow onion fine chopped
-some tomato sauce
-seasonings to your taste (Italian herbs salt free blend, Dash garlic and herb, garlic powder, salt and pepper)
I just mixed the filling together and then filled each pepper half. I then topped each one with a couple spoonfuls of marinara sauce.
I baked them at 350F for one hour. Just let them cook until the peppers are as soft as you personally like them.
