Ingredients:
• Quinoa
• Coconut milk
• Carrot
• Onion
• Peas (or any vegetables you like)
• Salt to taste

For the herb oil:
• Extra virgin olive oil
• Fresh basil
• Parsley
• Mint
• Salt

Preparation:
Cook the quinoa as usual and set aside.

In a pan, sauté the chopped onion and carrot with a bit of coconut milk. Add the peas (or your chosen vegetables), a little more coconut milk, and salt to taste. Let everything cook gently until the vegetables are soft and slightly creamy.

Mix the vegetables with the quinoa and combine well.

For the herb oil, blend olive oil with fresh basil, parsley, mint, and a pinch of salt until smooth.

Serve the quinoa warm and finish with a drizzle of the herb oil on top.
